Beef Tartare + Slutty Chardonnay


Let's leave the archaic rules of red wine and beef firmly in the past, shall we?

I teamed up with Krafty Kitchen to test out their classic tartare with a couple sexy chardonnays from The Hatch winery in West Kelowna. Check out the video and see the fun we had, then scroll below to get the recipe to try out for yourself!


Classic Tartare

Vinaigrette:

1/2 cup shallots

1/4 cup soy

2 tbsp sherry vinegar

2 tbsp lemon juice

1 tbsp tabasco

1/2 cup Dijon mustard

2 1/2 tsp salt and pepper

1 cup oil

1/2 cup capers, minced

1/4 cup diced pickled onion

Method:

Emulsify oil into liquids; add chunkier items afterward

3 oz red meat of choice

1 oz vinaigrette

10 grams of egg yolk per serving

Mix bison with vinaigrette, serve topped with egg yolk, your choice of accroutrements and french fries.
